Can't vs. won't

I like how on my patient portal, my doctor writes "patient refuses to change diet".  Even after I explained how I have severe food restrictions.  One of which is that I've got food and that it's not a matter of "won't change", as much as it is "CAN'T change" my food intake.  I can make small adjustments, but not anything significant.

If it had been my regular primary care doctor, he would've known about my food problems, & wouldn't have made it an issue as he knows my medical history inside and out.  This lady doesn't seem to understand that distinction of "can't" vs. "won't".  I *can't* eat certain foods or else I get violently sick.  Even [certain individual] doesn't quite get this hard fact.

After having tried multiple times to eat "normal", I gave up since every time I tried had the same result.  I get violently sick.  It's not something I want to do every day, getting violently sick repeatedly in the name of "eating healthy".  I won't put my body through any unnecessary stress due to dietary restrictions.
